Simple little easy as chips salad recipe. Perfect for a post training meal, or a training day breakfast.
Ingredients:
The salad:
Rocket (big heap)
Bacon (2-4 slices)
Dried Figs (2-3, make sure they are just dried figs, no added preservatives)
Dried Prunes (1 or 2, Same as above)
1-2 slices of good mature cheddar (feta would do too)
Dressing:
Honey 1 tsp
Mustard 1 tsp
Olive oil 1 tbs
White wine vinegar 1 tbs
For the dressing:
Mix ingredients together in a jar, shake well. Taste, and adjust to your preferences. This makes way more then you need, hence using a jar that you can seal and leave in the fridge!
1. Cook the bacon to your liking
2. Wash and arrange big heaping pile of rocket
3. Dice the figs, prunes, bacon and cheese
4. Arrange like a beautiful edible painting. Or just toss together.
5. Add dressing to taste.
Recently I’ve become a little obsessed with horticulture, it’s place in society and how maybe we should be growing as much as we can to A. save money and B. save the planet. This has somewhat informed a lot of my Christmas presents. I figure that the politics around food production drives so much of our consumption, and therefore our lifestyle, health and ultimately happiness, we both as individuala and as a nation need to work on self sufficiency, for our own sake. For me that means buying locally sourced, seasonal organic food and in spirit at least trying to cultivate my own.
I live in an apartment, so what I can grow is sorely limited, plus I quite like buying most of our Veg from local farmers who I’m getting to know however I felt fairly confident that I could and can grow some herbs and maybe some chilies on our only windowsill that has enough sunlight to.
This is the initial space I have to work with:

As well as a larger one for an ornamental chili plant.
I intend to plant:
1 Coriander
1 Parsley
1 Chives
1 Basil
1 Oregano
1 Demon red Chili
1 Mint
Cress
All of these will get transferred to larger pots when done. Maybe might buy some mushroom kits as well to make use of the basement.
Viva la evolution I suppose.

I did not actually mention land in relation to food production which makes this a bit weird, though I’ll address the point because I’ve heard it before and it’s a opportunity to discuss it.
1. People eat too much of certain foods anyway, be it meat or processed grain. I totally agree that people eat way too much meat and this obviously has an environmental impact, however the exact same can be same of grain. I would advocate for a reduction in the production of both.
2. I personally eat grass-fed organic meat, and wild game when I can, therefore no grain is used to feed it and the same land used to cultivate the meat provides its food.
3. If we stopped eating meat the land would not “clear up” Big Agriculture, be it soy, grains or meat, is an industry that relies on excess, eliminating meat would only create a deficit that the industry would fill, their production does not meet our needs, the industry sets the needs of its consumers in line with what it produces. Take for example corn syrup and oil in the states, they are used not because they are environmentally sound or even better or cost effective, they are used because the industry creates the need for its product regardless of the environmental or health costs to its consumers.
In short, though I accept the premise that vegetarianism/veganism does have environmental benefits over a standard big industry based western diet, that is in no way what I practice, and regardless of its basis, big industry is bad for the land, the environment and people.

Often we hear about people becoming vegetarian/vegan and greatly improving their health/karma, though rarely the other side is shown, as a once vegetarian I now consider myself an ethical meat eater, and an happy, healthier and more ethically conscious then I ever was as a vegetarian.

Vegetarianism has benefits, this is undeniable, but these benefits can also be seen as resulting from vegetarianism an alternative to the western diet, which is low on plants and high in processed foods. Simply put, the benefits of vegetarianism could simply be a result of an increase in plant matter in the diet, rather than a result of eliminating meat, which we have eaten for hundreds of thousands of years.
